3lbBeef chuck roastcan cut into 2 or 3 large chunks
1lbof Italian sausage linkssweet or hot
1ozpacket of Italian dressing/seasoning mix
1cupof low-sodium beef broth
½cupof Pepperoncini peppers with juice
4clovesof minced Garlic
1sliced small onion
Instructions
Turn your Instant Pot to Sauté mode. Brown the Italian sausage links on all sides for about 5 minutes, then remove the sausage and set aside.
Add the beef to the pot to get a quick sear on each side and around each edge.
Press Cancel. Pour in the beef broth and pepperoncini juice, then add the garlic, sliced onions, and the packet of Italian seasoning mix.
Place the browned sausage links right on top of and around the beef.
Secure the lid and set the valve to Sealing. Select Pressure Cook (or Manual) on High Pressure for 50 minutes.
When the timer goes off, let the pressure release naturally for 15 minutes, then carefully turn the valve to quick-release any remaining steam and remove the lid (CAUTION: see note).
Remove the sausage links and set them aside.
Take the beef out, shred it using two forks, and return the shredded beef to the warm juices in the pot.
Enjoy as a sandwich or use as the star of another dish. (see note)
Notes
When removing the lid after cooking, the underside will have about 1/3 of a cup of VERY HOT condensed liquid, so keep the lid level until it's over the sink before tilting to one side to let it drain.To enjoy as a sandwich:
Slice open crusty French or Italian rolls.
Layer in a generous portion of the shredded Italian beef, then place a whole or sliced Italian sausage right on top.
Spoon the peppers and extra-warm au jus (also use for dipping) over the meats, top with provolone cheese, and place under an oven broiler for 2–3 minutes, until melted.
Finish with a spoonful of spicy or mild giardiniera before serving.
Or enjoy as a base for other dishes such as pizzas, calzones, omelettes, or whatever you want to create.
