Healthy-ish Italian Sausage & Spinach Pasta with Mozzarella (One Skillet!)

Ingredients

  • 1 lb of Italian Sausage
  • 2 tbsp of Olive oil
  • 1 diced Onion
  • 1 diced Green pepper
  • 1 tbsp of Salt
  • 1 tbsp of Black pepper
  • ½ tsp of Red pepper flakes
  • 1 tbsp of Italian seasonings
  • 1 tbsp of Garlic powder
  • 1 tbsp of Onion powder
  • 4 cloves of minced Garlic
  • Mushrooms
  • 1 bag of Spinach
  • 1 28 oz can of crushed Tomatoes
  • 1 tbsp of Sugar substitute with stevia
  • 1 lb of Pasta substitute with whole wheat
  • 1 lb of shredded Mozzarella cheese
  • up to 1 cup of reserved pasta water
  • top with Parmesan cheese

Instructions

  • In a large pot or wok, heat the olive oil over medium heat. Add the Italian sausage, breaking it into pieces.
  • Once the meat is broken down a bit, add the onions and green peppers, then mix in the salt and pepper.
  • Mix in the remaining seasonings.
  • Add the minced garlic, and mix.
  • Add the mushrooms.
  • Pour in the crushed tomatoes, stir well.
  • Stir in the sugar.
  • Mix in the sugar.
  • Simmer at least 20 minutes, stirring often. Add seasonings to taste.
  • Start cooking pasta to al dente.
  • Stir the spinach into the sauce. Simmer for 5 more minutes.
  • Mix in the pasta.
  • Mix in the mozzarella cheese.
  • To thin out the sauce, mix in a ¼ cup of the pasta water at a time until the sauce reaches your desired consistency.
  • Top with parmesan cheese.
