1cupof Barbecue sauce
Rub
or use rub of choice
1tspof Sea, or Himalayan saltsubstistute with natural sea salt or pink salt
1tbspof Black pepper
1tbspof Garlic powder
1tbspChili powder
1tbspOnion powder
1tbspof Brown sugarsubstistute with stevia brown sugar
Instructions
Rinse the ribs, using a paper towel for grip, remove membranes from the back of ribs.
To trim the backstrap, on the thicker end of the slab, about 2-3 bones in, cut a slit between the top of the ribs and the bottom of the backstrap.Using the slit as a handle, cut down and away along the natural path between the backstrap and the ribs. Once the bottom is aloose, cut the remaining top end to free the entire backstrap.
Rub your seasonings of choice over both sides of ribs and backstrap.
Place wire trivet rack in the bottom of the instant pot.
Add water, apple juice (or apple cider vinegar) and liquid smoke (optional, but recommended for a smokey flavor).
Place the ribs upright, with the meat side facing out. If you’re using one large rack of ribs, then circle them around the pot.
Secure lid and close vent.
Press “manual” or “pressure cook” and cook on high pressure for 25 minutes.
When the timer beeps, allow the pressure to naturally release for 15 min, then hold the valve to quick release.
Carefully remove the ribs and the backstrap to a large, foil-lined baking sheet and slather them in BBQ sauce.
Optional: broil them in the oven for 2-3 minutes to caramelize the bbq sauce.
Notes
*For "fall-off-the-bone" ribs, add 2 minutes to the cooking time.*For spare ribs, add 5-10 minutes to the cooking time.
