Instant Pot Italian Beef & Sausage Combo

Ingredients

  • 3 lb Beef chuck roast can cut into 2 or 3 large chunks
  • 1 lb of Italian sausage links sweet or hot
  • 1 oz packet of Italian dressing/seasoning mix
  • 1 cup of low-sodium beef broth or add more for more Au Jus sauce
  • 1 cup of whole Pepperoncini peppers with juice
  • 4 cloves of minced Garlic
  • 1 halved and sliced Onion
  • 3 Bell peppers sliced into strips
  • 2 tbsp of Worcheshire sauce

Instructions

  • Turn your Instant Pot to Sauté mode. Brown the Italian sausage links on all sides for about 5 minutes, then remove the sausage and set aside.
  • Add the beef to the pot to get a quick sear on each side and around each edge.
  • Press Cancel to turn off the Instant Pot. Place the browned sausage links right on top of and around the beef.
  • Pour in the beef broth, onions, the bell peppers, the pepperoncini's & their juice, the Worcestershire sauce, the garlic, and the packet of Italian seasoning mix.
  • Secure the lid and set the valve to Sealing. Select Pressure Cook (or Manual) on High Pressure for 50 minutes.
  • When the timer goes off, let the pressure release naturally for 15 minutes, then carefully turn the valve to quick-release any remaining steam and remove the lid.
  • Take the beef out and shred it and return the shredded beef to the warm juices in the pot.
  • Enjoy as a sandwich or use as the star of another dish. (see note)

Notes

To enjoy as a sandwich:
  • Slice open crusty French or Italian rolls.
  • Layer in a generous portion of the shredded Italian beef, then place a whole or sliced Italian sausage right on top.
  • Spoon the peppers and extra-warm au jus (also use for dipping) over the meats, top with provolone cheese, and place under an oven broiler for 2–3 minutes, until melted.
  • Finish with a spoonful of spicy or mild giardiniera before serving.
Or enjoy as a base for other dishes such as pizzas, calzones, omelettes, or whatever you want to create.
